Roasted Garlic:

  • 2 whole garlic bulbs
  • 1 tablespoon olive oil

Dip:

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons cream cheese (softened)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh chives (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Roast the garlic: Slice the tops off the garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.
  3. Prepare the dip: Squeeze roasted garlic into a bowl, mash into a paste. In a bowl, whisk sour cream, mayonnaise, and cream cheese until smooth. Add garlic, lemon juice, onion powder, salt, and pepper. Mix well.
  4. Chill and serve: Chill the dip for at least 30 minutes. Garnish with chives before serving.
