Instructions
- Roast the Beets: Preheat your oven to 400°F (200°C). Place the diced beets on a baking sheet lined with parchment paper and roast for 25-30 minutes, or until tender and easily pierced with a fork. Allow them to cool slightly.
- Cook the Jam: Transfer the roasted beets into a saucepan. Add sugar, water, lemon juice, apple cider vinegar, and salt. Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
- Simmer and Mash: Let the mixture simmer for 20-30 minutes, stirring occasionally, until the beets break down and the jam thickens. For a smoother jam, purée with an immersion blender to your desired consistency.
- Add Spices: Stir in ground ginger and grated orange zest if using. Continue simmering for an additional 5 minutes to meld the flavors together.
