- 2 tablespoons olive oil (plus more for drizzling)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 2–4 tablespoons cold water (as needed for texture)

Instructions
- Roast the Beet: Preheat the oven to 400°F (200°C). Wrap the trimmed and scrubbed beet tightly in foil and place it directly on the oven rack. Roast for 45 to 60 minutes until the beet is fork-tender, indicating it’s fully cooked. Once done, remove from the oven and let it cool completely before handling.
- Prepare the Beet: After cooling, peel the skin off the beet—it should come off easily by rubbing with your fingers or using a small knife. Chop the peeled beet into smaller pieces for easier blending.
- Blend the Hummus: In a food processor, combine the roasted beet pieces, drained and rinsed chickpeas, tahini, freshly squeezed lemon juice, minced garlic, olive oil, ground cumin, and salt. Blend until smooth, gradually adding 2 to 4 tablespoons of cold water, one tablespoon at a time, to reach your desired creamy consistency. Stop blending occasionally to scrape down the sides for even mixing.
- Adjust Seasoning and Serve: Taste the hummus and adjust seasoning with additional salt or lemon juice as desired. Transfer the hummus to a serving bowl, drizzle with extra olive oil for richness, and serve alongside an assortment of fresh raw vegetables like carrots, cucumbers, bell peppers, radishes, and snap peas.
