- 1 pound fresh strawberries, hulled
- 8 ounces cream cheese, softened
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
- ¼ cup crushed graham crackers
- ¼ cup blue sanding sugar or sprinkles
Instructions
- Prepare Strawberries: Wash and dry the strawberries. Use a small paring knife or melon baller to hollow out the center of each strawberry.
- Make Cheesecake Filling: In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
- Fill Strawberries: Transfer the cheesecake filling to a piping bag or zip-top bag with the corner snipped off. Pipe the filling into each hollowed strawberry, slightly mounding it on top.
- Coat and Chill: Dip the top of each filled strawberry into the crushed graham crackers, then gently dip into the blue sanding sugar to create a red, white, and blue effect. Arrange on a serving platter and chill for at least 30 minutes before serving.
