Veggies:
- 1/2 red bell pepper (sliced)
- 1/2 green bell pepper (sliced)
- 1/4 cup diced red onion
- 2 cloves garlic (minced)
Sauce:
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon crushed red pepper flakes (adjust to taste)
- 1/4 teaspoon smoked paprika
- 1/4 cup chopped fresh parsley (optional)
- Additional Parmesan for garnish
Instructions
- Cook the Pasta: Cook fettuccine according to package instructions until al dente. Drain and set aside.
- Sear the Chicken: Season chicken strips with Cajun seasoning, salt, and pepper. Sear in a skillet until browned and fully cooked. Remove and set aside.
- Sauté Veggies: In the same skillet, sauté bell peppers, onion, and garlic until tender.
- Make the Sauce: Add cream, Parmesan, red pepper flakes, and paprika to the skillet. Simmer until slightly thickened.
- Combine Everything: Return chicken to the skillet. Add cooked pasta and toss to combine. Warm through.
- Garnish and Serve: Garnish with parsley and Parmesan. Serve hot.
