Instructions

  1. Prepare Raspberry Powder: Place freeze-dried raspberries in a food processor or blender and pulse into a fine powder, reserving a small amount for optional garnish.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, salt, and raspberry powder.
  3. Cream Butter and Cheese: In a large mixing bowl, beat butter and cream cheese until smooth and creamy. Add sugar and beat until light and fluffy.
  4. Combine Wet Ingredients: Mix in egg and vanilla until fully incorporated.
  5. Form Dough: Gradually add the dry ingredients to the wet mixture, mixing on low speed until dough comes together.
  6. Chill Dough: Divide dough in half, roll each half to ¼-inch thickness between parchment paper, and refrigerate for at least 2 hours.
  7. Bake Cookies: Preheat oven to 350°F (180°C), cut dough into shapes, place on baking sheets, and bake for 10–12 minutes until golden around the edges.
