Rack of Lamb:

- 1 teaspoon fresh thyme (chopped)
- 2 cloves garlic (minced)
Fig Sauce:
- 1 cup dried figs (halved)
- 1/2 cup red wine
- 1/4 cup balsamic vinegar
- 1 tablespoon honey
- 1 tablespoon unsalted butter
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Season the lamb: Rub the lamb with olive oil, salt, pepper, rosemary, thyme, and garlic.
- Prepare the fig sauce: In a saucepan, combine figs, red wine, balsamic vinegar, and honey. Simmer until figs are soft.
- Roast the lamb: Roast the lamb for 25–30 minutes until desired doneness.
- Serve: Let the lamb rest, slice, and serve topped with warm fig sauce.
