For the Cream Cheese Frosting:

  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk or cream (as needed for consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a large bowl, sift together flour, sugar, baking soda, baking powder, salt, and cocoa powder.
  3. In a separate bowl, whisk together buttermilk, oil, eggs, vanilla, vinegar, food coloring, and melted butter until smooth.
  4. Gradually add the wet ingredients to the dry, mixing until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. For the frosting, beat the cream cheese and butter until creamy. Gradually add powdered sugar, then vanilla extract. Add milk or cream a little at a time until smooth and spreadable.
  8. Frost the cooled cake by placing one layer on a cake stand, spreading frosting in between, then stacking and covering the entire cake with remaining frosting. Chill for clean slices.
