Description

For the Glaze (optional):

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.

  3. In a large bowl, cream butter with granulated sugar and brown sugar until light and fluffy.
  4. Beat in eggs one at a time, then add pumpkin puree and vanilla. Mix in sour cream until combined.

  5. Gradually stir in dry ingredients until batter is smooth. Spread batter evenly in the prepared baking dish.
  6. For the streusel, combine flour, brown sugar, granulated sugar, and cinnamon in a small bowl. Pour in melted butter and stir until crumbly.
  7. Sprinkle streusel evenly over cake batter. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

  8. If glazing, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake before slicing.
