Description

These Potsticker Noodle Bowls are a quick and flavorful dish combining tender ground chicken, lo mein noodles, and a savory sauce infused with garlic, ginger, and soy. Enhanced with crisp coleslaw mix and a hint of spice from sriracha, this recipe offers a delicious, easy-to-make meal perfect for busy weeknights.

Ingredients

Scale

For the Noodle Bowl:

  • 8 oz lo mein noodles
  • 1 lb ground chicken
  • 2 green onions, sliced (plus extra for garnish)
  • 2 cups low-sodium chicken broth
  • 1 tablespoon apple cider vinegar (substitute for mirin)
  • 3 tablespoons dark soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha hot sauce (optional)
  • 2 cups coleslaw mix (shredded cabbage and carrots)

Instructions

  1. Boil the Noodles: Cook the lo mein noodles according to the package instructions until al dente. Drain them thoroughly and set aside to prevent overcooking.
  2. Cook the Chicken: Heat a large skillet over medium-high heat and add a small amount of oil if needed. Brown the ground chicken along with the sliced green onions, stirring frequently, until the chicken is fully cooked through and browned, about 5 to 6 minutes.
  3. Prepare the Sauce: In a separate bowl, whisk together the chicken broth, apple cider vinegar, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha hot sauce if you’re using it. This sauce will add a rich umami flavor and a touch of heat to the dish.
  4. Combine Ingredients: Return to the skillet with the cooked chicken. Add the boiled noodles and coleslaw mix. Pour the prepared sauce over all the ingredients, tossing well to evenly coat everything. Continue cooking for 2 to 3 minutes, stirring frequently until the coleslaw mix softens slightly and all components are heated through and infused with the sauce.
  5. Serve: Spoon the potsticker noodle bowls into individual serving bowls. Garnish with additional sliced green onions for freshness and a pop of color. Serve immediately while warm.

Notes

  • Use low-sodium chicken broth and soy sauce to control the salt content.
  • Sriracha is optional, adjust the amount based on spice preference.
  • Lo mein noodles can be substituted with spaghetti or any stir-fry noodles if unavailable.
  • Ensure not to overcook noodles to maintain texture.
  • For a vegetarian version, substitute ground chicken with tofu and use vegetable broth.
