Description

This hearty Pizza Soup combines the classic flavors of pizza in a comforting, easy-to-make soup. Featuring sausage, pepperoni, melted mozzarella, and Italian seasonings simmered in a rich tomato broth, it’s the perfect cozy meal for pizza lovers craving something different.

Ingredients

Scale

Meat and Cheese

  • 1 lb sausage, crumbled
  • 1 cup pepperoni slices
  • 2 cups shredded mozzarella cheese, divided

Vegetables and Aromatics

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • Fresh basil for garnish

Liquids and Seasonings

  • 1 can (28 oz) crushed tomatoes
  • 3 cups chicken or vegetable broth
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the sausage: In a large pot over medium heat, add the crumbled sausage and cook until fully browned. Drain any excess fat to keep the soup from becoming greasy.
  2. Sauté vegetables: Add the chopped onion, minced garlic, and diced bell pepper to the pot. Cook, stirring occasionally, until the vegetables soften and become fragrant, about 5 minutes.
  3. Simmer the base: Stir in the crushed tomatoes, chicken or vegetable broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer gently for about 20 minutes to meld the flavors.
  4. Add pepperoni and cheese: Stir in the pepperoni slices and half of the shredded mozzarella cheese. Cook until the cheese melts into the soup, creating a creamy texture.
  5. Serve: Ladle the soup into bowls, sprinkle the remaining mozzarella cheese on top, and garnish with fresh basil leaves. Serve hot and enjoy the comforting taste of pizza in a bowl.

Notes

  • For a vegetarian version, substitute sausage and pepperoni with plant-based alternatives and use vegetable broth.
  • You can adjust the spiciness by using spicy Italian sausage or adding red pepper flakes.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop.
  • Adding cooked pasta or croutons can enhance the texture and heartiness of the soup.
