For the Crust:

- ½ teaspoon salt

For the Pistachio Filling:
- ½ cup shelled pistachios
- ¼ cup granulated sugar
- 2 tablespoons unsalted butter (softened)
- 1 large egg
- ½ teaspoon vanilla extract
- 1 tablespoon all-purpose flour
For Topping:
- 1 cup fresh raspberries
- 2 tablespoons raspberry jam (warmed and strained)
- 1 tablespoon chopped pistachios (for garnish, optional)
Instructions
- Preheat the oven: to 350°F (175°C). In a food processor, pulse together flour, powdered sugar, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs. Add ice water 1 tablespoon at a time until dough begins to come together. Divide the dough evenly among 6 tartlet pans (4-inch), pressing into the bottom and up the sides. Prick the bottoms with a fork and chill for 15 minutes.
- Make the pistachio filling: Pulse pistachios and sugar in a food processor until finely ground. Add butter, egg, vanilla, and flour. Process until smooth.
- Bake the tartlets: Spoon the pistachio filling into the chilled tart shells. Bake for 18–22 minutes until the crust is golden and the filling is set. Cool completely.
- Assemble and serve: Top each tartlet with fresh raspberries, brush with raspberry jam, and garnish with chopped pistachios. Serve chilled or at room temperature.

- You can use pre-made tart shells to save time.
- For extra flavor, add a splash of almond extract to the filling.
