Baklava Rolls
- 1/2 pound phyllo dough, thawed
- 1 cup shelled pistachios, finely chopped
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
Syrup
- 1/2 cup honey
- 1/4 cup water
- 1/4 cup granulated sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 strip lemon zest (optional)
Instructions
- Preheat Oven and Prepare Filling: Preheat your oven to 350°F (175°C). In a small bowl, combine the finely chopped pistachios, granulated sugar, and ground cinnamon to create the flavorful filling mixture.
- Prepare Phyllo Layers: Unroll the thawed phyllo dough and keep it covered with a slightly damp towel to prevent it from drying out. Working with one sheet at a time, lightly brush the phyllo sheet with melted butter.
- Layer and Fill: Place a second phyllo sheet on top of the first and brush with butter again. Sprinkle 1 to 2 tablespoons of the pistachio mixture evenly along one short edge of the stacked phyllo sheets.
- Roll the Dough: Gently roll the phyllo sheets tightly into a log starting from the edge with the pistachio filling. Place the rolled log seam-side down on a parchment-lined baking sheet. Repeat this process with the remaining phyllo sheets and filling.
- Brush and Bake: Brush the tops of all the baklava rolls with the remaining melted butter. Bake in the preheated oven for 25 to 30 minutes or until they are golden brown and crisp.
- Make the Honey Syrup: While the rolls are baking, combine honey, water, granulated sugar, lemon juice, and lemon zest in a small saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer gently for 5 to 7 minutes. Remove from heat and stir in the vanilla extract. Discard the lemon zest strip if used.
- Finish and Serve: Once the rolls are out of the oven, immediately pour the warm honey syrup evenly over them. Allow the baklava rolls to cool completely so the syrup can soak in thoroughly. Optionally, garnish with extra chopped pistachios before serving.
