Description

Ingredients:

  • 1 tablespoon unsalted butter
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup white chocolate chips or chopped white chocolate
  • 1/2 cup finely ground pistachios
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup finely chopped or ground pistachios (for rolling)


Instructions

  1. In a nonstick saucepan over medium-low heat, melt the butter. Add the sweetened condensed milk, white chocolate, ground pistachios, salt, and vanilla extract. Stir constantly with a silicone spatula for 10–15 minutes, scraping the sides and bottom of the pan, until the mixture thickens and pulls away from the sides of the pan like soft dough.
  2. Remove from heat and let the mixture cool to room temperature. Once cool, lightly butter your hands and roll the mixture into 1-inch balls. Roll each ball in the extra chopped pistachios to coat. Place in mini paper cups or on a parchment-lined tray.
  3. Serve immediately or refrigerate until ready to serve.

Notes

  • To speed up cooling, spread the mixture onto a plate and refrigerate for 30 minutes.
  • For a nut-free variation, use coconut or cookie crumbs for coating.
