- 1 tablespoon unsalted butter
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup white chocolate chips or chopped white chocolate
- 1/2 cup finely ground pistachios
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 1/4 cup finely chopped or ground pistachios (for rolling)
Instructions
- In a nonstick saucepan over medium-low heat, melt the butter. Add the sweetened condensed milk, white chocolate, ground pistachios, salt, and vanilla extract. Stir constantly with a silicone spatula for 10–15 minutes, scraping the sides and bottom of the pan, until the mixture thickens and pulls away from the sides of the pan like soft dough.
- Remove from heat and let the mixture cool to room temperature. Once cool, lightly butter your hands and roll the mixture into 1-inch balls. Roll each ball in the extra chopped pistachios to coat. Place in mini paper cups or on a parchment-lined tray.
- Serve immediately or refrigerate until ready to serve.
Notes
- To speed up cooling, spread the mixture onto a plate and refrigerate for 30 minutes.
- For a nut-free variation, use coconut or cookie crumbs for coating.
- Store in an airtight container for up to 5 days.
