Description

Pistachio Coating:

  • 1 cup white chocolate chips
  • 2 tablespoons pistachio paste or finely ground pistachios
  • 1 tablespoon coconut oil

Instructions

  1. Prep Pistachio Base: Blend pistachios and oats in a food processor until crumbly. Add maple syrup, melted coconut oil, and salt; pulse until mixture holds together. Press into dome cavities.
  2. Make Raspberry Filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in mashed raspberries. Spoon over bases.
  3. Freeze Domes: Chill for 4 hours or overnight until set.
  4. Prepare Coating: Melt white chocolate with coconut oil, stir in pistachio paste. Coat domes and chill to set.
