  • 1/2 teaspoon celery seeds
  • 1/4 teaspoon turmeric


Instructions

  1. Prepare Vegetables: Combine the diced red bell pepper, green bell pepper, yellow onion, minced jalapeño, and minced garlic in a medium bowl. Set this mixture aside while you prepare the pickling liquid.
  2. Make Pickling Liquid: In a small saucepan, add apple cider vinegar, water, sugar, salt, mustard seeds, celery seeds, and turmeric. Bring the mixture to a gentle boil over medium heat, stirring until the sugar dissolves completely.
  3. Simmer Spices: Reduce the heat and simmer the pickling liquid for 2 minutes to allow the spices to bloom and release their flavors fully.
  4. Combine Relish and Pickling Liquid: Immediately pour the hot pickling liquid over the vegetable mixture. Stir well to coat all the vegetables evenly with the pickling solution.
  5. Cool and Store: Allow the relish to cool to room temperature. Transfer it to a clean jar with a tight-fitting lid. Refrigerate for at least 4 hours before serving to let the flavors meld beautifully.
