This Philly Cheesesteak recipe features thinly sliced ribeye steak cooked to perfection with caramelized onions and bell peppers, layered with melted Provolone cheese on toasted hoagie rolls. A classic, hearty sandwich that’s quick to prepare and packed with flavor.

Instructions
- Prepare the Steak: Partially freeze the ribeye steak for about 30 minutes to make slicing easier. Then slice it as thinly as possible against the grain to ensure tenderness.
- Cook the Vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers (if using), season with salt and pepper, and sauté until caramelized and softened, about 8-10 minutes. Remove vegetables from the skillet and set aside.
- Cook the Steak: Increase the heat to high and add the remaining tablespoon of olive oil to the skillet. Add the thinly sliced steak, season with salt and pepper, and cook quickly, stirring often, until browned, about 2-3 minutes. Divide the cooked steak into four portions in the skillet.
- Assemble the Sandwiches: On the bottom half of each toasted hoagie roll, layer one portion of the cooked steak followed by the sautéed onions and bell peppers. Then top each sandwich with two slices of Provolone cheese.
- Melt the Cheese: Place the sandwiches under the broiler for a few minutes until the cheese is melted and bubbly, careful not to burn the bread.
- Serve: Remove from the oven and top each sandwich with the other half of the hoagie roll. Serve hot and enjoy immediately.
Notes
- Partially freezing the steak makes it easier to slice thinly and improves the texture when cooked.
- Using Provolone cheese is traditional, but cheddar or American cheese can be substituted based on preference.
- The green bell pepper is optional, but adds a sweet crunch and extra flavor.
- Be sure to toast the hoagie rolls to prevent sogginess from the steak juices.
