Ingredients
Scale
Crust
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Filling
- 4 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
- Pinch of salt
Instructions
- Preheat and Prepare Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then set aside to cool.
- Beat Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese until smooth. Add 1 cup sugar and continue beating until well combined and fluffy.
- Add Flavor and Eggs: Mix in the vanilla extract and a pinch of salt. Add eggs one at a time, mixing on low speed after each just until combined to avoid overmixing.
- Incorporate Creams: Blend in sour cream and heavy cream until the mixture is smooth and creamy.
- Pour and Prepare for Baking: Pour the batter over the cooled crust. Tap the pan gently on the counter to release any air bubbles. Place the springform pan into a large roasting pan and pour hot water into the roasting pan to create a water bath, reaching halfway up the sides of the springform pan.
- Bake: Bake for 60–70 minutes, or until the center is set but still slightly jiggly.
- Cool in Oven: Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour to prevent cracking.
- Chill: Remove from the oven and water bath, then refrigerate for at least 4 hours or overnight before serving to allow the cheesecake to set fully.
Notes
- Use full-fat cream cheese and room-temperature ingredients for best results.
- Avoid overmixing the batter to prevent cracks.
- Let the cheesecake cool gradually in the oven to maintain texture.
- Top with fresh berries, fruit compote, or a drizzle of chocolate or caramel sauce for added flavor.
