Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then set aside to cool.
  2. Beat Cream Cheese Mixture: In a large mixing bowl, beat the softened cream cheese until smooth. Add 1 cup sugar and continue beating until well combined and fluffy.
  3. Add Flavor and Eggs: Mix in the vanilla extract and a pinch of salt. Add eggs one at a time, mixing on low speed after each just until combined to avoid overmixing.
  4. Incorporate Creams: Blend in sour cream and heavy cream until the mixture is smooth and creamy.
  5. Pour and Prepare for Baking: Pour the batter over the cooled crust. Tap the pan gently on the counter to release any air bubbles. Place the springform pan into a large roasting pan and pour hot water into the roasting pan to create a water bath, reaching halfway up the sides of the springform pan.

  7. Cool in Oven: Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour to prevent cracking.
