Crust:
- 1 package refrigerated pie crusts (or homemade, enough for 12 mini tarts)
Filling:
- 1 cup chopped pecans
- 1/2 cup brown sugar (packed)
- 1/4 cup corn syrup
- 1 tablespoon unsalted butter (melted)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Others:
- Nonstick spray or butter (for greasing the muffin tin)
Instructions
- Preheat the oven and prepare the tin: Preheat the oven to 350°F and lightly grease a mini muffin tin.
- Prepare the crust: Roll out the pie crust and cut 12 circles. Press each circle into the wells of the muffin tin to form mini crusts.
- Make the filling: Whisk together brown sugar, corn syrup, melted butter, egg, vanilla, and salt until smooth. Stir in chopped pecans.
- Fill the crusts: Spoon about 1 tablespoon of filling into each crust.
- Bake: Bake for 20 to 25 minutes until set and golden brown. Cool before serving.
Notes
- These can be made ahead and stored in an airtight container for up to 3 days.
- Add a touch of bourbon or maple syrup to the filling for a flavor twist.
