Description

Crust:

  • 1 package refrigerated pie crusts (or homemade, enough for 12 mini tarts)

Filling:

  • 1 cup chopped pecans
  • 1/2 cup brown sugar (packed)
  • 1/4 cup corn syrup
  • 1 tablespoon unsalted butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Others:

  • Nonstick spray or butter (for greasing the muffin tin)

Instructions

  1. Preheat the oven and prepare the tin: Preheat the oven to 350°F and lightly grease a mini muffin tin.
  2. Prepare the crust: Roll out the pie crust and cut 12 circles. Press each circle into the wells of the muffin tin to form mini crusts.
  3. Make the filling: Whisk together brown sugar, corn syrup, melted butter, egg, vanilla, and salt until smooth. Stir in chopped pecans.
  4. Fill the crusts: Spoon about 1 tablespoon of filling into each crust.
  5. Bake: Bake for 20 to 25 minutes until set and golden brown. Cool before serving.
