Description

This refreshing Peach Watermelon Salad is the perfect summer dish combining juicy watermelon, sweet peaches, tangy feta, and fresh mint, all brought together with a light, zesty dressing. Ideal for hot days, it’s quick to prepare, vibrant, and packed with summertime flavors.

Ingredients

Scale

Fruit

  • 4 cups cubed watermelon, seedless
  • 2 ripe peaches, pitted and sliced

Cheese & Herbs

  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon lime juice, freshly squeezed
  • 1/2 teaspoon honey (optional, for extra sweetness)
  • Pinch of sea salt
  • Pinch of freshly ground black pepper

Instructions

  1. Prepare the Fruit: Cube the watermelon into 1-inch pieces and slice the peaches into thin wedges. Place both fruits together in a large mixing bowl to start building your salad.
  2. Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, and freshly squeezed lime juice. Add the optional honey for extra sweetness, followed by a pinch of sea salt and freshly ground black pepper. Whisk thoroughly until the dressing is emulsified.
  3. Assemble the Salad: Pour the prepared dressing gently over the watermelon and peaches. Toss the fruits gently to ensure even coating without bruising the delicate fruit pieces.
  4. Add Cheese and Mint: Sprinkle crumbled feta cheese and chopped fresh mint leaves on top of the dressed fruit. Toss lightly once more to distribute the flavors evenly throughout the salad.
  5. Chill and Serve: Cover the salad and refrigerate it for at least 30 minutes to allow flavors to meld and serve it cold. For an extra touch, garnish with additional mint leaves or a drizzle of balsamic glaze if desired.

Notes

  • If peaches are not in season, you can substitute with nectarines or fresh apricots.
  • For a vegan version, omit feta or replace it with a plant-based cheese alternative.
  • Adjust honey amount depending on the sweetness of the fruit and your preference.
  • This salad is best served fresh but can be stored in the refrigerator covered for up to 24 hours.
  • Adding chopped cucumber or red onion can give added crunch and flavor variations.
