Ingredients
Scale
Fruit
- 4 cups cubed watermelon, seedless
- 2 ripe peaches, pitted and sliced
Cheese & Herbs
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, chopped
Dressing
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon lime juice, freshly squeezed
- 1/2 teaspoon honey (optional, for extra sweetness)
- Pinch of sea salt
- Pinch of freshly ground black pepper
Instructions
- Prepare the Fruit: Cube the watermelon into 1-inch pieces and slice the peaches into thin wedges. Place both fruits together in a large mixing bowl to start building your salad.
- Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, and freshly squeezed lime juice. Add the optional honey for extra sweetness, followed by a pinch of sea salt and freshly ground black pepper. Whisk thoroughly until the dressing is emulsified.
- Assemble the Salad: Pour the prepared dressing gently over the watermelon and peaches. Toss the fruits gently to ensure even coating without bruising the delicate fruit pieces.
- Add Cheese and Mint: Sprinkle crumbled feta cheese and chopped fresh mint leaves on top of the dressed fruit. Toss lightly once more to distribute the flavors evenly throughout the salad.
- Chill and Serve: Cover the salad and refrigerate it for at least 30 minutes to allow flavors to meld and serve it cold. For an extra touch, garnish with additional mint leaves or a drizzle of balsamic glaze if desired.
Notes
- If peaches are not in season, you can substitute with nectarines or fresh apricots.
- For a vegan version, omit feta or replace it with a plant-based cheese alternative.
- Adjust honey amount depending on the sweetness of the fruit and your preference.
- This salad is best served fresh but can be stored in the refrigerator covered for up to 24 hours.
- Adding chopped cucumber or red onion can give added crunch and flavor variations.
