Instructions

Bring the mixture to a boil, then reduce heat to low and cover. Let it simmer gently for 1 to 1.5 hours, stirring occasionally, until peas are tender and the soup thickens. Remove the bay leaf and ham hock; shred any meat and return it to the pot. Season with salt and black pepper to taste before serving.
  2. Prepare Fresh Green Pea Soup: In a saucepan, warm butter or olive oil over medium heat. Sauté the chopped onion until soft and translucent, about 4 minutes. Add the fresh or frozen green peas and vegetable broth, bringing the mixture to a boil. Then reduce heat to a simmer and cook for 5–7 minutes, until the peas are tender.
