Cheese Layer

  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Fresh Toppings

  • 1 medium tomato, diced
  • 1 small red onion, finely chopped
  • 1 small jalapeño, thinly sliced (optional)
  • 2 tbsp fresh cilantro, chopped
  • 1 small avocado, diced

Zesty Sauce

  • 1/2 cup sour cream
  • 2 tbsp mayonnaise
  • Juice of 1/2 lime
  • 1/2 tsp chili powder
  • Salt and pepper, to taste


Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for baking the pasta chips.
  2. Cook Pasta: Boil the rigatoni or penne in salted water until just al dente, approximately 2 minutes less than the package instructions recommend. Drain the pasta thoroughly and pat it dry using a clean towel to remove excess moisture.
  3. Season Pasta: In a bowl, toss the dried pasta with olive oil, garlic powder, smoked paprika, salt, and black pepper until evenly coated to infuse the chips with flavor.
  4. Bake Pasta Chips: Spread the seasoned pasta in a single layer on the prepared baking sheet. Bake for 18 to 22 minutes, flipping the pasta halfway through to ensure it crisps evenly on all sides. Once golden and crisp, allow them to cool for 5 minutes.
  5. Prepare Zesty Sauce: While the pasta bakes, whisk together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper in a small bowl until smooth. Set this zesty sauce aside.
