Asparagus

  • 1 bunch asparagus, trimmed
  • 1 tablespoon olive oil

  • 1/2 cup shaved parmesan

Tomato Mixture

  • 1 pint cherry tomatoes, halved or quartered
  • 2-3 garlic cloves, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Garnish

  • 7 large basil leaves, sliced thin
  • Balsamic reduction, store-bought or homemade


Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper to prepare for roasting.
  2. Prepare Tomatoes: In a bowl, toss together the halved or quartered cherry tomatoes with minced garlic and 1 teaspoon of olive oil. Season the mixture with salt and pepper to taste, then set aside to marinate.
  3. Prep Asparagus: Snap off the tough ends of the asparagus and place the spears in a bowl. Drizzle with 1 tablespoon olive oil and season with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss until evenly coated, then arrange the asparagus evenly on the prepared baking sheet.
  4. Add Toppings: Sprinkle the shaved parmesan evenly over the asparagus on the baking sheet. Then, spoon the prepared tomato mixture on top of the asparagus and parmesan.
