For the fish nuggets:
- 1 pound white fish fillets (such as cod or tilapia), cut into 1-inch chunks
- 1/2 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs

Instructions
- Preheat the oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- Prepare the coating: In a shallow bowl, beat the eggs. In another bowl, mix the Parmesan cheese, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
- Coat the fish: Dip each fish piece into the egg mixture, then coat it in the Parmesan breadcrumb mixture, pressing gently to adhere.
- Bake: Place the coated fish nuggets on the prepared baking sheet. Lightly spray the tops with cooking spray for extra crispiness. Bake for 15–18 minutes, flipping halfway through, until golden brown and the fish flakes easily with a fork.
- Serve: Serve warm with tartar sauce, lemon wedges, or your favorite dipping sauce.

- For an air fryer version, cook at 400°F for 8–10 minutes, shaking halfway through.
- You can substitute almond flour and crushed pork rinds for a low-carb version.
