Chicken:
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
Vegetables:
- 2 tablespoons unsalted butter
- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 3 cloves garlic (minced)
Other:
- 3 cups chicken broth
- 1 cup heavy cream
- 8 oz penne or fettuccine pasta (uncooked)
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley (for garnish)
Instructions
- Coat and Cook Chicken: Toss chicken with 1 tablespoon Cajun seasoning. Sear in olive oil until cooked; set aside.
- Sauté Vegetables: Melt butter, sauté peppers and garlic.
- Add Ingredients: Mix in broth, cream, pasta, and seasoning. Simmer until pasta is cooked.
