Description

No Peek Chicken Rice Casserole is a convenient and comforting one-dish meal where chicken, rice, and creamy soups meld together to create a deliciously easy dinner that bakes up all in one pan.

Chicken and Rice:

  • 4 boneless, skinless chicken breasts
  • 1 cup long grain white rice (uncooked)

Soup Mixture:

  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10.5 oz) can cream of celery soup
  • 1 (10.5 oz) can cream of chicken soup
  • 1 1/2 cups low-sodium chicken broth

Seasonings:

  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 packet dry onion soup mix

Instructions

  1. Preheat Oven and Prepare Dish: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Mix Rice and Soups: In a large bowl, combine rice, cream of mushroom soup, cream of celery soup, cream of chicken soup, chicken broth, onion powder, garlic powder, and black pepper. Mix well.
  3. Assemble and Bake: Pour the mixture into the baking dish. Place chicken breasts on top and sprinkle with dry onion soup mix. Cover with foil and bake for 1 hour and 30 minutes.
  4. Rest and Serve: Let the dish rest for 5 minutes after baking. Uncover and serve hot.

  • You can substitute chicken thighs for breasts.
  • For added flavor, consider adding mushrooms or vegetables to the rice mix.
