Chicken and Rice:
- 4 boneless, skinless chicken breasts
- 1 cup long grain white rice (uncooked)
Soup Mixture:
- 1 (10.5 oz) can cream of mushroom soup
- 1 (10.5 oz) can cream of celery soup
- 1 (10.5 oz) can cream of chicken soup
- 1 1/2 cups low-sodium chicken broth
Seasonings:
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 packet dry onion soup mix
Instructions
- Preheat Oven and Prepare Dish: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Mix Rice and Soups: In a large bowl, combine rice, cream of mushroom soup, cream of celery soup, cream of chicken soup, chicken broth, onion powder, garlic powder, and black pepper. Mix well.
- Assemble and Bake: Pour the mixture into the baking dish. Place chicken breasts on top and sprinkle with dry onion soup mix. Cover with foil and bake for 1 hour and 30 minutes.
- Rest and Serve: Let the dish rest for 5 minutes after baking. Uncover and serve hot.
Notes
- You can substitute chicken thighs for breasts.
- For added flavor, consider adding mushrooms or vegetables to the rice mix.
- If using brown rice, extend bake time to about 2 hours and 15 minutes.
