  • ½ cup almond butter (or any nut butter of choice)

Instructions

  1. Soften Dates: Soak the pitted Medjool dates in warm water for 10 minutes if they are firm to soften them. Then drain thoroughly to remove excess water.
  2. Chop Nuts: Place the raw almonds in a food processor and pulse a few times until they are finely chopped, but not turned into flour.
  3. Add Dates: Add the softened dates to the chopped almonds in the food processor and blend until the mixture is well combined and sticky.
  4. Mix Dry: In a separate bowl, combine the unsweetened cocoa powder, chia seeds, shredded coconut, and a pinch of sea salt. Mix well to evenly distribute the ingredients.
  5. Mix Wet: In another bowl, stir together the almond butter, maple syrup (or honey), and vanilla extract until smooth and evenly mixed.
  6. Combine All: Add the dry mix into the food processor with the date and almond mixture, then pour in the wet mixture. Blend everything until fully incorporated and forming a thick, sticky batter.
  7. Press: Line an 8Ă—8-inch baking dish with parchment paper. Transfer the brownie mixture into the dish and firmly press it down evenly to create a compact layer.
  8. Chill: Refrigerate the pressed mixture for at least 1 hour to allow it to set and firm up.
