Egg Rolls

  • 12 egg roll wrappers
  • Vegetable oil for frying (about 1 inch in a skillet)

Instructions

  1. Prepare the Filling: In a large bowl, thoroughly combine the black beans, shredded cheddar cheese, corn, chopped pickled jalapeños, diced red bell pepper, chopped green onions, chili powder, cumin, garlic powder, salt, and softened cream cheese until evenly mixed and creamy.
  2. Assemble the Egg Rolls: Lay one egg roll wrapper on a clean surface in a diamond orientation. Spoon approximately 2 tablespoons of the filling near the center of the wrapper. Fold the bottom corner over the filling, then fold in the left and right sides tightly, and roll the wrapper upwards toward the top corner, sealing the edge with a small dab of water to secure it. Repeat this process for all 12 wrappers and filling.
  3. Heat the Oil: Pour vegetable oil into a large skillet to a depth of about 1 inch and heat it over medium heat until it reaches approximately 350°F (175°C), ideal for deep frying.
  4. Fry the Egg Rolls: Carefully place the prepared egg rolls into the hot oil in batches, avoiding crowding. Fry them, turning occasionally, for about 3 to 4 minutes or until they turn a lovely golden brown and crisp on all sides.
  5. Drain and Serve: Remove the fried egg rolls from the oil and drain them on paper towels to absorb excess oil. Serve warm with 1/2 cup of salsa as a tasty dipping sauce.
