Description

This Mountain Dew Jelly Recipe transforms the classic citrus soda into a sweet, tangy homemade jelly perfect for spreading on toast, biscuits, or using as a unique glaze. Combining Mountain Dew, lemon juice, fruit pectin, and sugar, this easy-to-make preserve captures a vibrant flavor with a bright hue, ideal for adventurous cooks looking to add a fun twist to their pantry staples.

Ingredients

Scale

Jelly Ingredients

  • 2 cups Mountain Dew
  • 1 tablespoon lemon juice
  • 1 (1.75-ounce) box powdered fruit pectin (such as Sure-Jell)
  • 3 cups granulated sugar

Instructions

  1. Combine Ingredients: In a large saucepan, mix Mountain Dew, lemon juice, and powdered fruit pectin. Stir thoroughly to blend all components before beginning to heat.
  2. Boil Mixture: Bring the mixture to a boil over high heat, stirring constantly to prevent burning and ensure pectin activates properly.
  3. Add Sugar: Once the mixture reaches a boil, add all the sugar at once and stir until it completely dissolves.
  4. Return to Boil: Bring the mixture back to a full rolling boil and continue boiling hard for 1 minute while stirring constantly to achieve the proper jelly consistency.
  5. Remove Foam: Remove the pan from heat and carefully skim off any foam that formed on top using a spoon for a clear finish.
  6. Jar the Jelly: Ladle the hot jelly carefully into sterilized jars leaving ¼ inch of headspace at the top to allow for expansion during processing.
  7. Seal and Process: Wipe the jar rims clean, apply lids, and process the jars in a boiling water bath for 5 minutes to ensure a proper seal and safe preservation.
  8. Cool and Store: Let jars cool completely at room temperature. After 24 hours, check seals; refrigerate any jars that did not seal properly and use them within 3 weeks.

Notes

  • For a fun twist, add a drop of green food coloring to enhance the vibrant hue of the jelly.
  • This jelly works wonderfully on toast, biscuits, or as a glaze for grilled meats, adding a unique sweet and citrusy flavor.
