Ingredients
Scale
Crust
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
Filling
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 ounces unsweetened chocolate, melted and cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup all-purpose flour
- 1/2 cup chopped pecans (optional)
Topping
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup semisweet chocolate chips, melted for topping
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the chocolate cookie crumbs, 1/4 cup granulated sugar, and melted butter until thoroughly mixed. Press this mixture into the bottom and sides of a 9-inch pie dish to form an even crust. Bake for 8–10 minutes, then remove from oven and allow to cool completely.
- Make the filling: In a separate large mixing bowl, beat the softened butter and 1 cup sugar together until light and fluffy. Gradually add the melted unsweetened chocolate, eggs, vanilla extract, and salt, mixing well until smooth. Stir in the flour and the chopped pecans if using, ensuring an even distribution.
- Bake the pie: Spread the chocolate filling evenly over the cooled crust. Place the pie in the oven and bake for 25–30 minutes, or until the center is set but still slightly soft to the touch. Remove from oven and allow the pie to cool completely to room temperature.
- Prepare the topping: In a chilled mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form, creating a light and airy topping.
- Assemble and chill: Spread the whipped cream evenly over the cooled pie. Drizzle the melted semisweet chocolate chips over the top as a decorative and flavorful topping. Transfer the pie to the refrigerator and chill for at least 2 hours before serving to let the flavors meld and the pie to set fully.
Notes
- You can substitute walnuts for pecans or omit nuts altogether if preferred.
- For a more intense chocolate flavor, consider topping the pie with chocolate shavings or a light dusting of cocoa powder in addition to the melted chocolate drizzle.
- Make sure the pie is fully cooled before adding the whipped cream topping to prevent it from melting.
- Use chilled heavy cream for best whipping results.
