Cheese Balls:
- 8 ounces cream cheese, softened
- 1½ cups shredded sharp cheddar cheese
- ½ cup pepper jack cheese, shredded
- 1 tablespoon taco seasoning
- ¼ teaspoon garlic powder
- ½ cup canned diced green chiles, drained
- ¼ cup finely chopped cilantro
Coating:
- ½ cup crushed tortilla chips or finely chopped roasted pepitas

Instructions
- Mix Ingredients: In a large bowl, combine cream cheese, cheddar, pepper jack, taco seasoning, garlic powder, and green chiles. Add cilantro and chill for 20–30 minutes.
- Shape Cheese Balls: Using a small scoop, form mixture into bite-sized balls. Roll each ball in crushed tortilla chips or pepitas.
- Chill and Serve: Insert a toothpick into each cheese ball and chill until ready to serve.
