Potato Rounds:
- 1 1/2 pounds small Yukon Gold or red potatoes
- 3 tablespoons olive oil

- 1/2 cup grated Parmesan cheese
Garnish:
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat Oven: Preheat oven to 400°F and line a baking sheet with parchment paper.
- Prepare Potatoes: Wash and slice potatoes into 1/4-inch thick rounds.
- Toss with Seasonings: In a bowl, toss potato slices with olive oil, salt, pepper, garlic powder, and Italian seasoning.
- Arrange and Bake: Place potatoes on the baking sheet, sprinkle with Parmesan, and bake for 25–30 minutes until golden and tender.
- Garnish and Serve: Remove from oven, garnish with parsley, and serve hot.
