MexiMelt is a quick and flavorful Mexican-inspired recipe featuring seasoned ground beef melted with a trio of cheeses inside warm flour tortillas, topped with fresh pico de gallo. Perfect for a satisfying 18-minute meal that serves 6, combining savory, cheesy, and fresh flavors in every bite.
Ingredients
Scale
Beef Mixture
- 1 lb ground beef
- 1 packet taco seasoning mix
- Water as directed on seasoning packet
Assembly
- 6 soft taco-sized flour tortillas
- 1 ½ cups shredded cheddar cheese
- 1 ½ cups shredded Monterey Jack cheese
- 1 ½ cups shredded mozzarella cheese
- 1 ½ cups pico de gallo
Instructions
- Prepare Beef: Brown the ground beef in a skillet over medium heat, breaking it into small pieces as it cooks. Once fully cooked, drain off any excess grease. Add the taco seasoning mix along with the amount of water specified on the packet and cook until the liquid is fully absorbed and the beef is well seasoned.
- Warm Tortillas: Dampen a paper towel and wrap the tortillas inside it to keep them moist. Microwave the wrapped tortillas for 30 seconds to soften them, making them pliable for rolling.
- Assemble: Place about 4 tablespoons of the seasoned ground beef in the center of each warmed tortilla. Top evenly with 2 tablespoons each of shredded cheddar, Monterey Jack, and mozzarella cheeses. Then add 2 tablespoons of fresh pico de gallo on top of the cheese layer.
- Heat and Roll: Microwave each assembled tortilla individually for 30 seconds to gently melt the cheeses. After heating, tightly roll up each tortilla around the filling to form a neat wrap. Serve immediately while warm and melty.
Notes
- Drain the beef well to avoid soggy tortillas.
- Microwaving tortillas wrapped in a damp paper towel helps prevent them from drying out.
- You can substitute the cheese blend with your favorite Mexican cheeses like queso fresco or pepper jack for variation.
- Serve with sour cream or guacamole for added creaminess.
- If pico de gallo is unavailable, use salsa or chopped fresh tomatoes, onions, and cilantro.
