  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch thick rounds

Seasoning:

  • ¼ cup unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Additional:

  • 1 cup low-sodium chicken broth
  • 2 cloves garlic, smashed
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 425°F.
  2. Prepare Potatoes: In a large bowl, combine melted butter, olive oil, garlic powder, thyme, salt, and black pepper. Toss potato slices in the mixture until fully coated.
  3. Roast Potatoes: Arrange potatoes in a single layer on a greased baking dish. Roast for 15 minutes, flip, and roast for another 15 minutes until crispy.
  4. Add Broth: Pour chicken broth and smashed garlic into the pan. Roast for an additional 15 minutes until absorbed.
  5. Garnish and Serve: Garnish with parsley before serving.
