Potatoes:
- 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch thick rounds
Seasoning:
- ¼ cup unsalted butter, melted
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
Additional:
- 1 cup low-sodium chicken broth
- 2 cloves garlic, smashed
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat Oven: Preheat the oven to 425°F.
- Prepare Potatoes: In a large bowl, combine melted butter, olive oil, garlic powder, thyme, salt, and black pepper. Toss potato slices in the mixture until fully coated.
- Roast Potatoes: Arrange potatoes in a single layer on a greased baking dish. Roast for 15 minutes, flip, and roast for another 15 minutes until crispy.
- Add Broth: Pour chicken broth and smashed garlic into the pan. Roast for an additional 15 minutes until absorbed.
- Garnish and Serve: Garnish with parsley before serving.

- You can substitute vegetable broth for a vegetarian option.
- For extra flavor, sprinkle Parmesan cheese on top during the last 5 minutes of baking.
