  • 2 tbsp olive oil
  • 1 small red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes
  • Salt and black pepper, to taste
  • ¼ cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • Lemon wedges for serving

Instructions

  1. Heat olive oil: In a large skillet over medium-high heat, heat olive oil.
  2. Cook ground beef: Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Sauté vegetables: Add onion, bell peppers, and garlic to the skillet and sauté until softened.
  4. Add remaining ingredients: Stir in zucchini, cherry tomatoes, oregano, smoked paprika, red pepper flakes, salt, and pepper. Cook until vegetables are tender.
  5. Finish and serve: Remove from heat, sprinkle with feta cheese and parsley. Serve hot with lemon wedges.
