- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 cloves garlic, minced
- 1 medium zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 tsp dried oregano
- ½ tsp smoked paprika
- ¼ tsp red pepper flakes
- Salt and black pepper, to taste
- ¼ cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
- Lemon wedges for serving
Instructions
- Heat olive oil: In a large skillet over medium-high heat, heat olive oil.
- Cook ground beef: Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Sauté vegetables: Add onion, bell peppers, and garlic to the skillet and sauté until softened.
- Add remaining ingredients: Stir in zucchini, cherry tomatoes, oregano, smoked paprika, red pepper flakes, salt, and pepper. Cook until vegetables are tender.
- Finish and serve: Remove from heat, sprinkle with feta cheese and parsley. Serve hot with lemon wedges.
