- 2 tablespoons olive oil
- 1/2 small red onion, thinly sliced
- 1 clove garlic, minced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup roasted red peppers, chopped
- 1/4 cup kalamata olives, pitted and sliced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 2–4 large eggs
- Fresh parsley or basil for garnish
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Sauté vegetables: Heat olive oil in an oven-safe skillet over medium heat. Sauté red onion until softened, then add garlic. Stir in cherry tomatoes, roasted red peppers, and olives. Season with oregano, red pepper flakes, salt, and pepper. Cook until tomatoes soften.
- Add feta and eggs: Stir in crumbled feta. Make wells in the mixture and crack eggs into them. Bake in the oven for 7–10 minutes until eggs are set.
- Garnish and serve: Garnish with parsley or basil. Serve warm with bread.
