Description

Marry Me Chicken Pasta is a rich and creamy dish featuring tender chicken breasts cooked to golden perfection and served over a bed of perfectly al dente pasta. The luscious sun-dried tomato cream sauce, infused with garlic, Italian seasoning, and a hint of red pepper flakes, brings a delightful depth of flavor. Finished with fresh basil and extra Parmesan cheese, this comforting recipe is perfect for a special weeknight dinner or a romantic meal.

Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

Sauce

  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes

Pasta & Garnish

  • 8 ounces pasta (fettuccine, penne, or spaghetti)
  • Fresh basil leaves, for garnish
  • Additional grated Parmesan cheese, for garnish

Instructions

  1. Season and cook the chicken: Pat the chicken breasts dry and season them with salt and pepper. Heat olive oil and butter in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side until golden brown and cooked through. Remove from the pan and let rest.
  2. Prepare the creamy sun-dried tomato sauce: In the same skillet, add chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Stir in the heavy cream, grated Parmesan cheese, chopped sun-dried tomatoes, minced garlic, Italian seasoning, and red pepper flakes. Simmer gently for 5-7 minutes until the sauce thickens slightly.
  3. Cook the pasta: Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  4. Assemble the dish: Slice the cooked chicken breasts and arrange them over the cooked pasta. Pour the creamy sun-dried tomato sauce over the top to coat everything evenly.
  5. Garnish and serve: Sprinkle fresh basil leaves and additional grated Parmesan cheese on top before serving warm.

Notes

  • For extra flavor, marinate the chicken breasts in a mixture of olive oil, garlic, and Italian seasoning for 30 minutes before cooking.
  • You can substitute heavy cream with half-and-half for a lighter sauce but expect a slightly less creamy texture.
  • Use gluten-free pasta to make this dish gluten free.
  • Adjust red pepper flakes according to your preferred spice level.
  • Sun-dried tomatoes packed in oil will add more richness; if using dry, rehydrate them in warm water first.
