For the Chicken:

  • 4 boneless skinless chicken thighs or breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil

For the Orzo:

  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup orzo pasta (uncooked)
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • Chopped fresh basil or parsley for garnish


Instructions

  1. Season the Chicken: Season the chicken with salt, pepper, and garlic powder.
  2. Sear the Chicken: Heat olive oil in a large deep skillet or Dutch oven. Sear the chicken on both sides until golden. Remove and set aside.
  3. Prepare the Orzo: In the same pan, melt butter and sauté garlic and red pepper flakes. Add sun-dried tomatoes, oregano, thyme, and orzo. Pour in chicken broth and simmer until orzo is al dente.
  4. Finish the Dish: Stir in cream and Parmesan. Add spinach, return chicken to the pan. Warm through. Garnish with basil or parsley.

Notes

  • For extra richness, use boneless thighs instead of breasts.
  • You can also add mushrooms or swap spinach for kale.
  • This dish reheats well and makes great leftovers.
