  • 1/2 teaspoon vanilla extract

For the topping (optional):

  • 1/2 cup sour cream
  • 1 tablespoon powdered sugar
  • lime zest and coarse salt for garnish
  • whipped cream and lime wedges (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C).
  2. Prepare the crust: Mix graham cracker crumbs, sugar, lime zest, and melted butter. Press into a pan and bake.
  3. Make the filling: Beat cream cheese, sugar, cornstarch, then add eggs one at a time. Mix in lime juice, tequila, triple sec, lime zest, and vanilla.
  4. Bake: Pour filling over crust and bake until set. Cool, then refrigerate.
  5. Top and serve: Spread sour cream mix over the top, garnish, and serve chilled.
