Description

This Mango Salsa Salmon recipe offers a delicious and vibrant twist on classic pan-seared salmon. Juicy salmon filets are seasoned with a flavorful blend of spices, cooked to perfection in a skillet, and topped with a fresh, zesty mango salsa that combines ripe mango, red onion, bell pepper, jalapeño, lime juice, and cilantro. Perfect for a healthy and refreshing meal ready in just 25 minutes.

Ingredients

Scale

For the Salmon

  • 4 salmon filets
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

For the Mango Salsa

  • 1 large ripe mango, diced
  • 1/4 cup red onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and diced
  • 2 tablespoons lime juice
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Create seasoning mix: In a small bowl, combine the brown sugar, salt, pepper, garlic powder, and paprika. Mix thoroughly to create an even seasoning blend for the salmon.
  2. Prepare mango salsa: In a large bowl, add the diced mango, red onion, red bell pepper, jalapeño, lime juice, cilantro, and salt and pepper to taste. Stir everything well until the ingredients are fully combined, then set the salsa aside to allow the flavors to meld.
  3. Season the salmon: Brush the salmon filets all over with lime juice, then sprinkle and rub the prepared seasoning mix over each filet, ensuring even coverage on all sides.
  4. Cook the salmon: Heat olive oil in a skillet over medium-low heat. Place the seasoned salmon filets in the skillet, skin side down. Cook undisturbed for 5 minutes, then gently flip each filet and cook for another 5 minutes, or until the internal temperature reaches 145°F and the fish flakes easily with a fork.
  5. Serve: Remove the cooked salmon from the skillet. Plate each filet and spoon generous amounts of mango salsa on top. Serve immediately and enjoy!

Notes

  • Ensure the skillet is adequately heated before placing the salmon to prevent sticking and to develop a nice crust.
  • Adjust the amount of jalapeño in the salsa depending on your preferred spice level.
  • The mango salsa can be made ahead and refrigerated for up to 2 days to enhance the flavor blending.
  • For an extra touch, garnish with additional fresh cilantro or lime wedges.
  • Check the internal temperature of salmon with a food thermometer to ensure it is cooked safely to 145°F.
