Panna Cotta Base
- 1 1/2 cups heavy cream
- 1/2 cup whole milk
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 teaspoons unflavored gelatin
- 3 tablespoons cold water
Mango Layer
- 1 1/2 cups mango puree (fresh or canned)
- 1 tablespoon lime juice
- 1 tablespoon honey
Garnish (optional)

- Mint leaves
Instructions
- Bloom the gelatin: In a small bowl, sprinkle the gelatin over cold water and let it sit for 5 minutes until it blooms and softens.
- Heat cream mixture: In a saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat, stirring gently until the sugar dissolves and the mixture is just about to simmer, but do not boil.
- Dissolve gelatin: Remove the saucepan from heat and stir in the bloomed gelatin until it completely dissolves into the cream mixture. Then add the vanilla extract and mix well.
- Chill panna cotta base: Pour the cream mixture evenly into 4 to 6 small serving glasses or ramekins, filling each about two-thirds full. Refrigerate for at least 4 hours or until fully set.
- Prepare mango puree: While the panna cotta is chilling, blend the mango puree with lime juice and honey until smooth and well combined.
- Layer mango puree: Once the panna cotta has set, gently spoon the mango mixture over each glass to create a vibrant mango layer on top.
- Final chill: Return the panna cotta glasses to the refrigerator and chill for an additional 30 minutes to allow the mango layer to set slightly.
- Garnish and serve: Before serving, optionally garnish with diced fresh mango and fresh mint leaves for added flavor and visual appeal.
Notes
- For a vegan version, replace heavy cream and whole milk with full-fat coconut milk and substitute gelatin with agar-agar following package instructions.
- To achieve a marbled mango effect, swirl the mango puree into the panna cotta base before chilling rather than layering it on top.
- Use ripe, fresh mangos for the best flavor or high-quality canned mango puree if fresh is not available.
