Ingredients
Scale
Butter Base
- 1 stick unsalted butter
Batter
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon salt
- 1 cup sugar
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon extract
Topping
- 1 can lemon pie filling (about 21 oz)
Instructions
- Preheat and melt butter: Preheat your oven to 350°F (175°C). Place 1 stick of unsalted butter in a 9×9-inch baking dish and put it in the oven to melt while you prepare the batter.
- Mix dry ingredients: In a medium bowl, whisk together 1 cup all-purpose flour, 2 teaspoons baking powder, ¼ teaspoon salt, and 1 cup sugar until evenly combined.
- Combine wet ingredients: Stir in 1 cup buttermilk, 1 teaspoon vanilla extract, and 1 teaspoon lemon extract into the dry mix until just combined to form the batter.
- Pour batter over butter: Carefully remove the baking dish from the oven once the butter has melted, and pour the batter over the melted butter without stirring. This layering is crucial for the cobbler’s texture.
- Add lemon pie filling: Spoon the entire can of lemon pie filling over the batter. As it bakes, the filling will sink down creating the distinct lemon layer on the bottom.
- Bake: Bake in the preheated oven for 45-55 minutes until the top is golden brown and the edges are set. Insert a toothpick into the cake portion to check for doneness—it should come out clean or with a few moist crumbs.
Notes
- Do not stir after pouring the batter over the melted butter; this allows the cobbler layers to form properly.
- Use room temperature buttermilk for best mixing results.
- If you don’t have lemon extract, you can substitute with fresh lemon zest and a bit more vanilla extract, but the flavor may be less intense.
- This cobbler is best served warm with a scoop of vanilla ice cream or whipped cream.
- Leftovers can be refrigerated for up to 3 days and reheated gently before serving.
