Description

This Low Carb Unstuffed Cabbage Casserole is a hearty, comforting dish that combines savory ground beef, tender cabbage, and a blend of flavorful spices, all topped with melted cheddar and Jack cheese. It’s an easy one-pan recipe perfect for a quick, satisfying low-carb meal.

Ingredients

Scale

Main Ingredients

  • 3 tablespoons oil
  • 1 lb ground beef
  • 1 sweet onion, chopped
  • 1 orange bell pepper, seeded and chopped
  • 3 garlic cloves, chopped
  • 14 oz can fire-roasted diced tomatoes
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 1 small head green cabbage, cored and chopped
  • 2 cups shredded cheddar/Jack cheese

Instructions

  1. Prepare and Cook Meat and Vegetables: Heat oil in a large pan over medium-high heat. Add ground beef, chopped onion, and chopped orange bell pepper. Cook until the ground beef is browned evenly and the onions become translucent, stirring occasionally to break up the meat and prevent sticking.
  2. Sauté Garlic: Add the chopped garlic to the pan with the beef mixture and sauté for about 1 minute until fragrant, making sure not to burn the garlic.
  3. Add Tomatoes and Spices, Then Cabbage: Stir in the fire-roasted diced tomatoes along with smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper. Mix well to combine the flavors. Then, top the mixture with the chopped cabbage. Cover the pan and cook for 15 to 20 minutes, allowing the cabbage to soften and absorb the flavors.
  4. Melt Cheese: Once the cabbage is tender, evenly sprinkle the shredded cheddar and Jack cheese over the top. Cover the pan again and let the cheese melt completely, which should take a few minutes.
  5. Serve: Serve the casserole hot, scooping out portions that include the meat, cabbage, and melted cheese. Enjoy this satisfying low-carb meal as a wholesome main dish.

Notes

  • You can substitute ground turkey or chicken for the beef for a leaner option.
  • For extra heat, add a pinch of chili flakes or cayenne pepper with the spices.
  • This dish reheats well, making it a great option for meal prep.
  • Use freshly shredded cheese for the best melting results.
  • If you prefer softer cabbage, cook covered for the full 20 minutes or slightly longer.
