Lobster Filling:
- 8 oz cooked lobster meat (chopped)
- 1 tablespoon unsalted butter
- 1 small shallot (finely minced)
- 1 garlic clove (minced)
- 1 tablespoon all-purpose flour
- ¼ cup dry white wine
- ¼ cup heavy cream
- 1 teaspoon Dijon mustard
- ¼ teaspoon paprika
- ¼ teaspoon sea salt

- 2 tablespoons finely grated Gruyère cheese (or Parmesan)
Assembly:
- 12 mini phyllo shells or puff pastry cups
- Chopped fresh parsley (for garnish)
Instructions
- Preheat the oven: Heat the oven to 375°F.
- Prepare the filling: Melt butter in a saucepan, sauté shallot and garlic, add flour, then gradually whisk in wine and cream. Stir in mustard, paprika, salt, and pepper. Fold in lobster and cheese.
- Fill the shells: Spoon the filling into phyllo shells or pastry cups.
- Bake: Bake for 10-12 minutes until golden.
- Garnish and serve: Garnish with parsley and serve warm.
