Ingredients

Scale

Potatoes

  • 4 large russet potatoes, scrubbed clean and patted dry
  • 4 tablespoons olive oil
  • 1.5 tablespoons sea salt for baked potato skins

Steak Bites

  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 2 teaspoons kosher salt
  • 2 tablespoons garlic, minced
  • 2 tablespoons Cajun seasonings (low sodium)
  • 4 tablespoons avocado oil, divided

Parmesan Cream Sauce

  • 1 1/2 cups heavy cream
  • 2/3 cup parmesan, grated
  • 2 tablespoons fresh parsley, minced
  • 2 wedges lemon, juice of
  • 1/2-1 teaspoon red pepper flakes
  • 1 teaspoon freshly cracked pepper

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper to prepare it for the potatoes.
  2. Prepare the potatoes: Rub the russet potatoes all over with olive oil and sprinkle sea salt on their skins. Place them on the prepared baking pan and bake in the oven for 50-60 minutes until they are tender when pierced with a fork.
  3. Cook the steak: While potatoes bake, cut the steak into bite-sized pieces. Season them thoroughly with Cajun seasoning and kosher salt. Heat 2 tablespoons of avocado oil in a skillet over medium-high heat, add minced garlic, and then sear the steak pieces until cooked to your preferred level of doneness. Remove steak and set aside.
  4. Make the parmesan cream sauce: In the same skillet, add the remaining 2 tablespoons of avocado oil and sauté garlic briefly in butter. Pour in the heavy cream and allow it to simmer gently. Stir in grated parmesan cheese, fresh lemon juice from the wedges, minced parsley, red pepper flakes, and freshly cracked pepper. Cook until the sauce thickens slightly.
  5. Assemble the loaded potatoes: Once the potatoes are baked, carefully slice them open and fluff the interiors with a fork to create a soft base. Stuff the potatoes generously with the cooked steak bites and drizzle the creamy parmesan sauce on top. Serve immediately while hot.

Notes

  • Choose firm, large russet potatoes for the best baked potato texture.
  • You can adjust the amount of Cajun seasoning and red pepper flakes based on your spice preference.
  • Use freshly grated parmesan cheese for a richer flavor in the sauce.
  • If desired, toppings like sour cream, shredded cheese, or green onions can be added for extra richness.
  • Let the steak rest a few minutes after cooking for juicier bites.
