  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup low-fat milk
  • ½ cup plain Greek yogurt
  • ½ cup grated Parmesan cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. Cook the Pasta: Cook the pasta according to package directions until al dente. Drain and set aside.
  2. Sear the Chicken: Season chicken strips with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat and cook chicken for 5–6 minutes until browned and cooked through. Remove and set aside.
  3. Prepare the Sauce: In the same skillet, melt butter and sauté garlic for 1 minute. Add chicken broth to deglaze the pan, then stir in low-fat milk and bring to a simmer. Whisk in Greek yogurt and Parmesan cheese until smooth and creamy. Stir in smoked paprika, salt, and black pepper.
  4. Combine Ingredients: Add cherry tomatoes and spinach, cooking until spinach wilts. Return chicken to the skillet and toss with the sauce. Add cooked pasta and mix until coated.
  5. Finish and Serve: Garnish with fresh parsley and serve.
