- zest of 1 lemon
Wet Ingredients:

- 1/4 cup maple syrup or honey
- 1 large egg
- 2 tablespoons melted coconut oil or butter
- 1 teaspoon vanilla extract
Additional Ingredients:
- 1 cup fresh or frozen blueberries
- additional lemon zest for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- Mix dry ingredients: In a large bowl, combine oats, baking powder, salt, cinnamon, and lemon zest.
- Combine wet ingredients: In another bowl, whisk together milk, maple syrup, egg, coconut oil, and vanilla.
- Combine ingredients: Pour wet ingredients into dry ingredients and stir until combined. Gently fold in blueberries.
- Bake: Pour mixture into the baking dish, spread evenly, and bake for 35 to 40 minutes until golden and set.
- Cool and serve: Let cool for 10 minutes, slice, and garnish with lemon zest if desired.
