  • 1 large egg
  • 1/2 teaspoon vanilla extract

Filling:

  • 1/4 cup sugar-free jam or fruit spread (such as strawberry or raspberry)

Glaze:

  • 1/4 cup powdered erythritol
  • 12 teaspoons almond milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a food processor or large bowl, combine almond flour, coconut flour, erythritol, xanthan gum, and salt. Add cold butter and mix until coarse crumbs form. Incorporate the egg and vanilla to form a dough. Chill if needed.
