Dough:
- 1 3/4 cups almond flour
- 2 tablespoons coconut flour
- 1 tablespoon powdered erythritol
- 1/4 teaspoon xanthan gum
- 1/4 teaspoon salt
- 1/4 cup unsalted butter (cold and cubed)
- 1 large egg
- 1/2 teaspoon vanilla extract
Filling:
- 1/4 cup sugar-free jam or fruit spread (such as strawberry or raspberry)
Glaze:
- 1/4 cup powdered erythritol
- 1–2 teaspoons almond milk
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll out the dough between parchment papers, cut into rectangles, and assemble the pop tarts with jam filling. Bake until golden.
- Prepare the glaze by mixing erythritol, almond milk, and vanilla. Drizzle over cooled pastries.
In a food processor or large bowl, combine almond flour, coconut flour, erythritol, xanthan gum, and salt. Add cold butter and mix until coarse crumbs form. Incorporate the egg and vanilla to form a dough. Chill if needed.
