Description

A creamy, low-carb twist on the classic macaroni and cheese using cauliflower instead of pasta. This Keto Cauliflower Mac and Cheese features tender steamed cauliflower florets smothered in a rich and cheesy sauce made from melted cheddar, Parmesan, and heavy cream, enhanced with garlic powder and butter. Perfect for those following a ketogenic diet or anyone seeking a comforting, gluten-free alternative.

Ingredients

Scale

Main Ingredients

  • 1 medium head cauliflower, cut into florets
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste

Optional Garnish

  • 1/4 cup chopped green onions (optional, for garnish)

Instructions

  1. Cook cauliflower: Steam or boil the cauliflower florets for 5 to 7 minutes until they are fork-tender. Drain the cauliflower thoroughly and set it aside to remove any excess moisture.
  2. Make cheese sauce: Heat a large skillet over medium heat and melt the butter. Add the garlic powder and sauté for about 30 seconds to release its aroma, being careful not to burn it.
  3. Add cream & cheese: Stir in the heavy cream, shredded cheddar cheese, and grated Parmesan cheese into the skillet. Continue stirring until the cheese melts completely and forms a smooth, creamy sauce.
  4. Combine: Add the cooked cauliflower to the skillet. Gently mash and stir the cauliflower to coat all the florets evenly with the cheesy sauce.
  5. Season & serve: Season with salt and freshly ground black pepper to taste. Garnish with chopped green onions if desired. Serve the dish hot for the best flavor and texture.

Notes

  • Ensure the cauliflower is well-drained to avoid a watery cheese sauce.
  • You can steam the cauliflower using a steamer basket or boil it in salted water.
  • For extra creaminess, add a little more heavy cream or a splash of cream cheese.
  • To make this dish vegetarian, ensure the cheese is free from animal rennet.
  • This dish can be reheated gently on the stovetop or microwave; add a splash of cream if it thickens too much when cooled.
