For the Beef Layer:

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 1 can (10 ounces) diced tomatoes with green chilies, drained

For the Cheese Layer:

  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1 can (4 ounces) diced green chilies

For the Biscuit Layer:

  • 2 cups Bisquick baking mix
  • 1/2 cup water
  • Salt and pepper, to taste
  • 1 medium onion, sliced
  • 1 green bell pepper, sliced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat. Drain excess grease. Add taco seasoning and water, simmer for 5 minutes, then remove from heat.
  3. Prepare the biscuit layer by mixing Bisquick and water to form dough. Press into a greased baking dish.
  4. Layer ingredients in this order: beef, cheese mixture, onions, bell peppers, diced tomatoes. Top with remaining cheeses.
  5. Bake uncovered for 30–35 minutes until bubbly and golden. Let cool before serving.
